BOUNTIFUL BLUE-GREEN ALGAE

Researchers have used non-toxic blue-green algae as a surrogate mother for a new protein, coaxing the microalgae to produce ‘meat fiber-like’ protein strands. This may result in sustainable foods with both the ‘right’ texture and requiring minimal processing. It might be possible to use these fibers in plant-based meat, cheese or some other new type of food. It’s an organism that can easily be grown sustainably, but it’s going to take a while before the production of protein strands from cyanobacteria begins.
