Spent barley, amounting to 36.4 million tons of landfill waste a year, could provide an alternative to meat protein. Brewing beer produces almost as much solid waste. It generates 36.4 million tons of leftover grain each year, most incinerated or heaped onto landfills, where it rots, releasing copious amounts of methane. A researchers’ solution uses microwave energy to extract over 80% of the protein remaining in nutrient-rich barley byproducts, for reuse in our diets.
